Classic Beef Goulash in Puff Pastry

A superb dish with a sophisticated presentation. Serve with chilled rose wine and finish the event with lemon cheesecake or citrus mousse.

Ingredients
1 large onion, sliced
1 lb. boneless beef bottom round or chuck roast, cut into 1-inch cubes
1 Tbsp. mild paprika
1/4 cup Lea & Perrins® The Original Worcestershire Sauce
2 tsp. Wyler’s® Beef Flavored Granules
2 cups red, yellow & green peppers, cut into strips
1/3 cup plain yogurt
1 Tbsp. cornstarch
1 sheet frozen puff pastry, thawed
2 Tbsp. fresh parsley, chopped
Instructions
  1. Preheat oven to 450°. Cut pastry into 4 pieces. Place onto inverted ramekins sprayed with nonstick spray. Prick with a fork and bake for 12 to 15 minutes, or until pastry is golden brown.
  2. Meanwhile, in a large saucepan, sprayed with nonstick spray then placed over medium-high heat, sauté onion for 2 to 3 minutes. Add beef, and brown for 4 to 5 minutes, stirring occasionally. Sprinkle with paprika and stir. Add Worcestershire Sauce, granules and 2 cups of hot water. Reduce heat to low and simmer, covered, for 40 minutes, stirring occasionally. Stir in peppers and cook for additional 10 to 12 minutes. In a small bowl, mix together the yogurt and cornstarch until dissolved. Stir yogurt mixture into beef and cook for additional 5 minutes over medium heat, or until slightly thickened, stirring frequently.
  3. To serve, place pastries right side up and spoon in meat mixture. Sprinkle with parsley and serve immediately.
Tips
  • If desired, substitute the 2 cups of beef broth with dry red wine.
